Preparation

  • Start by peeling and deveining the shrimp. Rinse them under cold water, then pat dry with a paper towel.
  • In a bowl, combine shrimp with olive oil, lime juice, salt, and pepper. Let them marinate for 10-15 minutes.
  • Heat your grill to medium-high. Drizzle with olive oil to prevent sticking.
  • Cook the marinated shrimp on the grill for about 2-3 minutes per side, until opaque and juicy.
  • While the shrimp grill, chop your mango, avocado, and toss your fresh greens in a salad bowl.
  • Once the shrimp are grilled, mix the greens, mango, avocado, and shrimp in a serving bowl.
  • Enjoy the salad immediately for the best flavor, optionally drizzling with extra lime juice.

Notes

For the best texture, chop the avocado and mango just before assembling the salad to maintain freshness.
