Ingredients
  

For the Pasta

  • 12 oz Rigatoni Pasta or ziti/penne as substitutes

For the Meat Sauce

  • 1 lb Ground Beef or mushrooms/lentils for vegetarian
  • 1 Yellow Onion optional
  • 3 cloves Garlic fresh or jarred minced
  • 28 oz Crushed Tomatoes or whole peeled tomatoes in a pinch
  • 2 tbsp Tomato Paste extra crushed tomatoes can be used in a bind
  • 1.5 tsp Italian Seasoning or a mix of dried basil, oregano, and thyme
  • 0.5 tsp Red Pepper Flakes optional

For the Cheesy Topping

  • 2 cups Mozzarella Cheese fresh mozzarella is best
  • 0.5 cup Parmesan Cheese or Grana Padano

For Garnish

  • Fresh Basil/Parsley or any fresh herb you love

How to Make Savory Italian Rigatoni Bake

  • Boil the Pasta: Bring a large pot of salted water to a rolling boil. Cook the rigatoni until al dente, about 1–2 minutes less than the package instructions. Once done, drain and set aside.
  • Brown the Beef: In a skillet over medium heat, brown the ground beef until it’s well cooked. Drain any excess grease.
  • Sauté Onions & Garlic: Add the chopped onion to the skillet and sauté for 3-4 minutes until softened. Stir in minced garlic and cook until fragrant, about 30 seconds.
  • Combine Sauce Ingredients: Pour in the crushed tomatoes, tomato paste, Italian seasoning, red pepper flakes, salt, and pepper. Let this simmer uncovered for 10 minutes until the sauce thickens.
  • Preheat the Oven: While the sauce simmers, preheat your oven to 375°F (190°C).
  • Mix Pasta with Sauce: In a large bowl, combine the cooked rigatoni with two-thirds of the meat sauce, ensuring all the pasta is generously coated.
  • Layer in Baking Dish: Spread a layer of the reserved sauce on the bottom of a baking dish. Add the pasta mixture on top, then finish with the remaining sauce.
  • Add Cheeses: Sprinkle the mozzarella and parmesan cheese evenly over the top.
  • Bake to Perfection: Place the dish in the oven and bake uncovered for 20–25 minutes, or until the cheese is melted and golden brown.
  • Let It Rest: After baking, let the rigatoni bake rest for 5 minutes before serving. Garnish with fresh herbs for a pop of color and flavor!

Notes

Let the dish sit for 5 minutes after baking to set for easier slicing and serving. Leftovers can be stored in the fridge for up to 4 days.
