  • 4 pieces boneless, skinless chicken breasts Bone-in can be used but will require adjusting cook time.

For the Marinade

  • 1/4 cup honey Swap with agave or maple syrup for a vegan option.
  • 1/4 cup fresh lemon juice About 2 lemons.
  • 4 cloves garlic, minced Fresh is best for richness.
  • 2 tablespoons soy sauce Opt for tamari for gluten-free.
  • 1 tablespoon olive oil Any neutral oil can replace this.
  • 1 teaspoon salt Adjust based on dietary preferences.
  • 1/2 teaspoon black pepper Leave out for a milder taste.
  • 1 teaspoon dried thyme Optional; fresh is an excellent alternative.

For Garnish

  • lemon slices
  • fresh parsley

Cooking Steps

  • In a bowl, whisk together honey, fresh lemon juice, minced garlic, soy sauce, olive oil, salt, black pepper, and thyme.
  • Place the chicken breasts in a resealable bag or dish. Pour the marinade over them and refrigerate for 30 minutes to 2 hours.
  • Preheat your oven to 375°F (190°C).
  • Remove the chicken from the marinade and arrange it in a baking dish.
  • Bake the chicken for 20 minutes. Meanwhile, boil the reserved marinade in a saucepan.
  • Brush the thickened marinade over the chicken and return it to the oven for an additional 5-10 minutes.
  • Let the chicken rest for a minute before slicing. Garnish with lemon slices and fresh parsley.
