Ingredients
  

For the Chicken Marinade

  • 4 pieces Chicken Breasts boneless and skinless
  • 2 tablespoons Olive Oil
  • 2 tablespoons Lime Juice
  • 2 teaspoons Chipotle Chili Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Cumin
  • to taste Salt
  • to taste Pepper

For the Burrito Assembly

  • 4 large Flour Tortillas
  • 2 cups Cooked Rice
  • 1 can Black Beans drained and rinsed
  • 1 cup Shredded Cheese cheddar or Monterey Jack
  • 2 cups Shredded Lettuce
  • 1 cup Diced Tomatoes
  • 1 cup Corn Kernels optional
  • 0.5 cup Chopped Cilantro optional
  • 0.5 cup Chipotle Ranch Dressing

Steps to Prepare

  • In a bowl, combine olive oil, lime juice, chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Cover the chicken breasts with this flavorful marinade and refrigerate it for 20 minutes to 2 hours.
  • Preheat your grill to medium-high heat. Place the marinated chicken on the grill and cook for 6-8 minutes on each side, or until the internal temperature reaches 165°F (74°C). Allow it to rest before slicing it into strips.
  • While the chicken is grilling, warm your tortillas in a pan and heat the cooked rice and black beans if they're cold.
  • Spread a generous amount of chipotle ranch dressing over each tortilla. Layer on the rice, black beans, sliced chicken, shredded cheese, lettuce, diced tomatoes, and corn. Sprinkle chopped cilantro on top if desired.
  • To wrap, fold the sides of the tortilla inward, then roll it tightly from the bottom to secure all the ingredients inside. Grill the wrapped burritos for 2-3 minutes for a crispy finish if desired.

Notes

Store wrapped burritos in the fridge for up to 3 days or freeze unassembled burritos for up to 3 months.
