Equipment

  • Skillet
  • Mixing bowl

Ingredients

For the Chicken

  • 1 pound Boneless, Skinless Chicken Breasts or grilled tofu for vegetarian
  • 2 tablespoons Soy Sauce or tamari for gluten-free
  • 2 tablespoons Honey or agave nectar
  • 1 tablespoon Rice Vinegar or apple cider vinegar
  • 1 tablespoon Sesame Oil or olive oil
  • 1 tablespoon Fresh Ginger or ground ginger, use less
  • 2 cloves Garlic minced or powdered
  • 1 teaspoon Red Pepper Flakes optional, to taste

For the Salsa

  • 1 cup Fresh Pineapple or canned as backup
  • 1 medium Red Bell Pepper
  • 1 small Red Onion or green onions
  • 1/4 cup Cilantro or parsley
  • 1 small Jalapeño optional, to taste
  • 1 tablespoon Lime Juice or lemon juice

For Assembly

  • 1 teaspoon Salt to taste
  • 8 pieces Tortillas (Corn/Flour) choose based on gluten preferences
  • 1 tablespoon Olive Oil for cooking chicken
  • 2 cups Shredded Cabbage/Slaw Mix

Optional Toppings

  • 1 medium Avocado Slices
  • 1/4 cup Sriracha Mayo
  • 1 pieces Lime Wedges

Instructions

Preparation

  • Marinate the Chicken: In a bowl, combine soy sauce, honey, rice vinegar, sesame oil, grated ginger, minced garlic, and red pepper flakes. Add diced chicken, coat well, then cover and refrigerate for at least 30 minutes for flavor infusion.
  • Prepare Pineapple Salsa: While the chicken marinates, chop fresh pineapple, red bell pepper, red onion, and cilantro. Mix them in a bowl with lime juice and a pinch of salt. Refrigerate until serving to let flavors meld.
  • Cook the Chicken: Heat some olive oil in a skillet over medium-high heat. Once hot, add the marinated chicken (discard remaining marinade) and cook for 5-7 minutes, or until the chicken is browned and cooked through (internal temp should reach 165°F).
  • Warm the Tortillas: Choose your method to warm the tortillas—skillet, microwave, or directly over a flame—until they are soft and pliable. This makes assembly easier and more enjoyable.
  • Assemble the Tacos: Take a warm tortilla, place a handful of shredded cabbage in the center, top with the cooked chicken, and then generously spoon over the pineapple salsa. Customize with optional toppings like avocado slices or sriracha mayo for an extra kick, and serve immediately.

Notes

Ensure chicken reaches an internal temperature of 165°F. Store leftovers in an airtight container for up to 3 days, separating fillings for optimal freshness.
