Making the Mochi

  • Mix Dough: In a mixing bowl, blend the sweet rice flour, sugar, and water until smooth.
  • Steam Dough: Transfer the dough to your lined steamer basket and steam for about 25 minutes until shiny and translucent.
  • Cool: Remove the basket from the heat and let the dough cool slightly, dusting your work surface with potato starch to prevent sticking.
  • Shape Mochi: Dust hands with potato starch, take portions of the cooled dough, flatten them, add red bean paste, fold, and roll into balls.
  • Serve: Place finished mochi on a serving platter, dust with extra potato starch if desired. Enjoy!
