Ingredients
  

For the Salad

  • 4 mini cucumbers or Persian cucumbers; sliced thinly if using English
  • 2 tablespoons green onion sliced, both white and green parts
  • 1 tablespoon sesame seeds optional

For the Dressing

  • 3 tablespoons low-sodium soy sauce or Tamari/Coconut Aminos
  • 2 tablespoons rice vinegar or white wine vinegar
  • 1 tablespoon sesame oil or chili oil if allergic
  • 1 teaspoon honey or maple syrup for vegan
  • 1 clove garlic minced
  • 1 teaspoon crushed red pepper flakes adjust according to heat preference

Steps

  • Wash and dry the cucumbers, cut off ends, and slice them at a 45° angle to create spiral cuts.
  • In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or maple syrup, garlic, and crushed red pepper flakes.
  • Combine the dressing with the cucumbers, mix gently, and top with green onion and sesame seeds before serving.
