For the Pork Marinade

  • 1 pound Pork Tenderloin or Pork Chops Substitute with chicken if desired
  • 2 tablespoons Fresh Ginger (grated) Best when fresh
  • 2 cloves Garlic (minced) Fresh is ideal
  • 2 juiced Limes Juice and zest
  • 1/4 cup Soy Sauce (low sodium recommended) Use tamari for gluten-free
  • 2 tablespoons Honey Maple syrup for vegan option
  • to taste Salt
  • to taste Pepper

For the Coconut Rice

  • 1 cup Jasmine Rice Basmati or brown rice can be substituted
  • 1 cup Coconut Milk Regular or light options work
  • 1 tablespoon Vegetable Oil Olive oil can be used as a substitute
  • 1 tablespoon Optional Sugar To taste

For Garnishing

  • 1/4 cup Fresh Cilantro Optional

Cooking Instructions

  • Rinse jasmine rice under cold water until the water runs clear.
  • In a medium saucepan, mix the rinsed rice with coconut milk, water, salt, and sugar.
  • Bring the mixture to a boil, reduce heat to low, cover, and simmer for about 15 minutes.
  • Whisk together ginger, garlic, lime juice, lime zest, soy sauce, honey, salt, and pepper in a bowl.
  • Cut pork into strips and coat thoroughly in the marinade; let sit for at least 10 minutes.
  • Heat vegetable oil in a skillet over medium-high heat.
  • Add marinated pork to the skillet and cook for 4-5 minutes until no longer pink.
  • Fluff the coconut rice with a fork and spoon pork over each portion.
  • Garnish with fresh cilantro before serving.

Notes

Longer marination enhances flavor. Adjust sweetness to taste for the marinade.
