For the Glaze (Optional)

  • 1 cup powdered sugar
  • 2 tbsp extra orange juice Adjust for consistency.

How to Make Zesty Cranberry Orange Breakfast Cake

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line with parchment paper.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla extract and orange zest.
  • Gradually add the dry ingredients to the wet mixture, alternating with fresh orange juice, mixing until just combined. Fold in cranberries gently.
  • Pour the batter into the prepared pan and bake for 40-45 minutes, until a toothpick comes out clean. Cool for 10 minutes then transfer to a wire rack.
  • For the optional glaze, whisk together powdered sugar and enough orange juice to reach a pourable consistency. Drizzle over the cooled cake.
  • Slice into wedges and serve warm, optionally with whipped cream.
