  • 0.5 teaspoon Kosher Salt Adjust to taste; Diamond Crystal is preferred for its mild flavor.
  • 0.5 teaspoon Umami Seasoning Add depth of flavor; can use kobucha, shio koji, bouillon, or dashi powder.

For the Garnish

  • 2 tablespoons Toasted White Sesame Seeds Can also use black sesame seeds for variation.
  • 2 tablespoons Toasted Sesame Oil Provides richness; essential for authentic flavor.
  • 2 cloves Garlic Fresh garlic is recommended; can be adjusted to taste.

How to Make Yamitsuki Cabbage

  • Start by grinding 2 tablespoons of toasted sesame seeds in a mortar and pestle, leaving some whole for that delightful crunch. Don’t forget to crush 2 cloves of fresh garlic and set them aside.
  • Take your fresh green cabbage and pack bite-sized pieces into a measuring cup until you reach 1 cup (80g). Repeat this for a total of 4 cups (320g) for a generous serving.
  • Sprinkle ½ teaspoon of kosher salt and ½ teaspoon of umami seasoning evenly over the cabbage. Cover the bowl and give it a good shake to ensure every piece is coated.
  • Drizzle in 2 tablespoons of toasted sesame oil, then add your crushed garlic and the ground sesame seeds. Cover once more and shake it thoroughly for an even distribution of flavors.
  • Transfer your beautifully crafted Yamitsuki Cabbage to a serving dish, sprinkle some additional sesame seeds on top for garnish, and serve immediately to keep that crunch!

Notes

For an optional enhancement, add a squeeze of lemon for a burst of freshness. Serve immediately to maintain the beautiful crunch and vibrant flavors.
