Soup Base

  • 2 large Onions (Yellow and Red) Sliced, forms the base flavor of the soup.
  • 4 cloves Garlic Minced, for flavor.
  • 1 teaspoon Sugar Optional, helps caramelize onions.
  • 4 cups Beef or Vegetable Broth Choose vegetable broth for vegetarian option.
  • 1 cup White Wine Optional, for added acidity.

Seasoning

  • 1 teaspoon Dried Thyme Can substitute with fresh thyme.
  • 1 teaspoon Dried Oregano Italian seasoning can be used as a substitute.
  • to taste Salt Adjust according to preference.
  • to taste Pepper Adjust according to preference.

Toppings

  • 1 cup Fontina Cheese (Grated) Can substitute with mozzarella if desired.
  • 1/2 cup Parmesan Cheese (Grated) Pecorino can be used as an alternative.
  • 4 slices Crusty Bread Sliced into rounds or cubes, use French or Italian bread.
  • 2 tablespoons Fresh Parsley For garnish.
  • Fresh Thyme Leaves Optional garnish.

Instructions
 

Preparation

  • In a large pot, combine the unsalted butter and olive oil over medium heat until melted and bubbly.
  • Stir in the sliced yellow and red onions along with the sugar. Cook for 25-30 minutes, stirring occasionally until the onions turn caramelized and golden brown.
  • Add minced garlic and sauté for 1-2 minutes until fragrant.
  • Pour in the white wine (if using) and let simmer for about 5 minutes.
  • Add the beef or vegetable broth, dried thyme, oregano, salt, and pepper. Stir well and bring to a boil.
  • Reduce to a simmer and let cook for 15 minutes.
  • Preheat your oven to 400°F (200°C).
  • Spread sliced crusty bread on a baking sheet and bake for 10 minutes until golden.
  • Ladle soup into oven-safe bowls, topping with crispy bread and grated Fontina and Parmesan.
  • Broil for 3-5 minutes until the cheese is melted and bubbly.
  • Garnish with fresh parsley and thyme, if using. Serve hot.

Notes

For added flavor, consider a dash of freshly cracked black pepper before serving.
