Ingredients
  

For the Puree

  • 1 lb Fresh Carrots peeled and chopped
  • 2 tbsp Butter (or Olive Oil) adds richness and creaminess
  • 1/4 tsp Salt adjust to taste
  • 1/4 tsp Black Pepper adjust to taste
  • Water (or Vegetable Broth) enough to cover carrots

How to Make Pureed Carrots

  • Start by washing and peeling 1 lb of fresh carrots. Chop them into uniform pieces.
  • In a pot, cover the chopped carrots with water or vegetable broth. Bring to a boil then reduce to a simmer for 15-20 minutes until fork-tender.
  • Once the carrots are tender, drain them well and transfer to a blender or food processor.
  • Add 2 tbsp of butter (or olive oil), 1/4 tsp salt, and 1/4 tsp black pepper to the blender. Pour in enough cooking liquid to achieve a smooth consistency.
  • Blend until creamy, adjusting seasoning to taste.
  • Spoon into bowls and garnish with fresh herbs if desired.

Notes

Store in an airtight container for up to 3 days in the fridge, or freeze in ice cube trays for up to 6 months.
