  • 1 medium onion (diced) yellow or white onions work wonders.
  • 1 can (14.5 oz) crushed or diced tomatoes canned is convenient, but fresh can elevate the dish.
  • 1 cup heavy cream or cream cheese for a lighter twist, half-and-half or plant-based creams work well.
  • 1 tsp Italian seasoning fresh herbs can be used if dried is unavailable.

For the Greens

  • 5 oz fresh spinach (loosely packed) kale or arugula makes an excellent alternative if you prefer something different.

For Seasoning

  • 1 tsp salt be sure to adjust to your taste preferences.
  • 1/2 tsp black pepper feel free to adjust based on how spicy you like your food.
  • 1/4 tsp red pepper flakes (optional) omit if you prefer a milder flavor profile.

For Garnishing

  • 1/2 cup grated Parmesan or Pecorino Romano cheese freshly grated cheese is always the best choice.
  • fresh basil for garnish (optional) adds a refreshing touch and elevates presentation.

How to Make One Pot Creamy Spinach Tomato Tortellini

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat. Sauté 3 minced garlic cloves and 1 diced onion until fragrant and translucent, about 3-5 minutes.
  • Add 1 can (14.5 oz) of crushed tomatoes and cook for 5 minutes. Then, stir in 1 cup of heavy cream or cream cheese until smooth, creating a rich base for your dish.
  • Introduce 9 oz of fresh cheese-filled tortellini into the sauce. Add a splash of water or broth, then cover and simmer for 3-5 minutes until the tortellini is tender and cooked through.
  • Stir in 5 oz of loosely packed fresh spinach, allowing it to wilt into the sauce for about 1-2 minutes.
  • Season your dish with salt, black pepper, 1 teaspoon of Italian seasoning, and optional red pepper flakes to your taste. Plate it up and generously garnish with freshly grated Parmesan cheese and a sprinkle of fresh basil.

Notes
