For the Pasta

  • 8 ounces Penne Pasta or preferred pasta

For the Bruschetta Topping

  • 2 medium Roma Tomatoes diced
  • 1 tablespoon Fresh Basil torn
  • 2 cloves Garlic freshly minced
  • 2 tablespoons Olive Oil extra virgin
  • 1 tablespoon Balsamic Vinegar

For the Garnish

  • 1/4 cup Parmesan Cheese freshly grated

How to Make Bruschetta Chicken Pasta

  • In a medium bowl, combine diced Roma tomatoes, minced garlic, torn basil leaves, olive oil, balsamic vinegar, and seasonings. Let this mixture marinate for at least 15 minutes.
  • Heat olive oil in a skillet over medium heat, season the chicken breasts, and sauté for about 3-4 minutes per side until golden brown and cooked through (internal temp should reach 165°F). Allow to rest for a few minutes before slicing.
  • Bring a large pot of salted water to a boil and add your pasta. Cook until al dente, typically around 8-10 minutes. Be sure to reserve ¼ cup of pasta water before draining.
  • In the skillet with the bruschetta mixture, warm it slightly, then add the drained pasta along with the reserved pasta water. Toss everything together until well combined. Top with sliced chicken, and garnish with freshly grated Parmesan and additional basil.
  • Optional: A squeeze of fresh lemon juice before serving brightens the flavors even more.

Notes

Store leftover pasta and bruschetta mixture separately in airtight containers for up to 3 days. For longer storage, freeze cooked pasta and chicken separately for up to 3 months.
