For the Casserole

  • 1 cup Long-Grain White Rice or substitute with basmati or brown rice
  • 1 can Cream of Chicken or Cream of Mushroom Soup can use homemade or low-sodium varieties
  • 1 cup Milk or substitute with almond milk for dairy-free
  • 1 cup Water
  • 1 packet Onion Soup Mix or try a homemade seasoning
  • 1 cup Shredded Cheddar Cheese or substitute with Monterey Jack or mozzarella
  • 2 cups Boneless, Skinless Chicken Breasts or Thighs chicken can be swapped with turkey
  • to taste Kosher Salt
  • to taste Black Pepper

For Serving (Optional)

  • to taste Fresh Herbs like parsley or thyme
  • 1 loaf Crusty Bread
  • 1 cup Light Side Salad

Instructions
 

Casserole Directions

  • Preheat your oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish with butter or cooking spray.
  • Whisk together rice, cream soup, milk, water, and onion soup mix in a large mixing bowl until well combined.
  • Pour the mixture into the greased dish and smooth out evenly across the bottom.
  • Sprinkle ½ cup of shredded cheddar cheese on top.
  • Season the chicken with salt and pepper, then lay it on top of the rice mixture.
  • Cover the dish tightly with aluminum foil.
  • Bake for 1.5 to 2 hours until the chicken reaches an internal temperature of 165°F (74°C) and the rice is tender.
  • Remove the foil, top with the remaining cheese, and bake uncovered for an additional 10-15 minutes until the cheese is bubbling and golden brown.
  • Let sit for 15-20 minutes before serving.

Notes
