For the Stir-Fry

  • 1 cup Bell Peppers Use colorful varieties
  • 1 medium Onion Sweet or red onions preferred
  • 2 cloves Garlic Minced, use fresh
  • 1 inch Ginger Fresh, minced
  • 2 tbsp Cooking Oil Use neutral or sesame oil sparingly

Optional Garnish

  • 2 tbsp Green Onions Sliced
  • 1 tbsp Sesame Seeds

Preparation Steps

  • Combine chicken breast pieces with soy sauce, black pepper, and cornstarch in a bowl. Let it marinate for at least 15 minutes.
  • In a large skillet or wok, heat a couple of tablespoons of neutral oil over high heat until it shimmers.
  • Add minced garlic and ginger, stirring for about 30 seconds until fragrant.
  • Add the marinated chicken to the skillet. Stir-fry until golden and cooked through, approximately 5-7 minutes.
  • Incorporate colorful bell peppers and onion. Stir-fry for an additional 3-4 minutes until veggies are tender yet still crisp.
  • Adjust seasoning with more black pepper if desired, stirring everything to combine.
  • Transfer the Black Pepper Chicken to a serving dish and garnish with green onions or sesame seeds. Serve with jasmine rice or stir-fried noodles.

Notes

For an extra kick, drizzle with a bit of sesame oil before serving. Store leftovers in an airtight container for up to 3 days.
