For the Cabbage Base

  • 2 medium Eating Apple Opt for crispy varieties like Gala or Fuji.

For the Flavor Boost

  • 1/2 cup Dairy-Free Block Margarine Can be replaced with olive oil.
  • 1 teaspoon Cinnamon Adds warm spice notes.
  • 1/4 teaspoon Grated Nutmeg Use sparingly for a subtle touch.
  • 1/4 cup Dark Brown Sugar Maple syrup or coconut sugar are good substitutes.

For the Sauce

  • 1 cup Cranberry Sauce Homemade or store-bought both work.
  • 1/4 cup Balsamic Vinegar Feel free to use red wine or cider vinegar.
  • 1/2 cup Port/Wine/Water Can be replaced with more vegetable broth or omitted.

Basic Instructions

  • Prepare the Cabbage: Remove outer leaves, halve and core red cabbage, then thinly slice it and place in slow cooker.
  • Slice the Onion: Peel and finely slice the red onion, then add it to the slow cooker.
  • Chop the Apple: Peel, core, and chop the eating apple into small chunks and sprinkle on top of cabbage mixture.
  • Mix Ingredients: Add remaining ingredients, season, and stir everything together until combined.
  • Cook: Set slow cooker on high for 4-5 hours or medium for 5-6 hours until cabbage is soft.

Notes

Serve with chopped pecans for added crunch. For best flavor, serve shortly after cooking. Can be frozen for up to 3 months.
