For the Cowboy Butter

  • 1/2 cup Unsalted Butter Consider vegan alternative if desired
  • 4 cloves Garlic Minced
  • 1 tablespoon Fresh Parsley Chopped
  • 2 tablespoons Chives Chopped, or use green onions
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Lemon Zest Can substitute with extra lemon juice
  • 1 teaspoon Dijon Mustard
  • 1/2 teaspoon Red Pepper Flakes Adjust to taste
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black Pepper To taste

  • Additional Fresh Herbs Parsley or chives
  • More Lemon Zest For serving

Preparation

  • Melt the unsalted butter in a saucepan over medium heat. Stir in minced garlic, lemon zest, lemon juice, Dijon mustard, parsley, chives, red pepper flakes, salt, and pepper. Simmer for 1 minute until fragrant.
  • Husk and silk the corn on the cob. If preferred, cut the cobs in half for easier handling and pat them dry with a paper towel.
  • Preheat your oven to 425°F (220°C) to ensure it's hot enough for a nice char on the corn.
  • Place the corn on a lined baking sheet. Generously brush each cob with the prepared cowboy butter, ensuring every nook and cranny is covered.
  • Bake the corn in the preheated oven for 20–25 minutes. Flip the cobs halfway through cooking to achieve a beautiful golden brown and slightly charred exterior.
  • Once done, remove the corn from the oven and brush with more cowboy butter while hot. Garnish with additional parsley or lemon zest for an extra burst of flavor.

Notes

Optional: Drizzle with balsamic glaze for a sweet and tangy finish. For best results, reheat leftovers in the oven or air fryer to restore flavor and texture.
