Ingredients
  

For the Sausage

  • 1 pound Smoked Sausage or Kielbasa Substitute with plant-based sausage for a vegetarian option.

For the Vegetables

  • 2 cups Zucchini Substitute with yellow squash for variety.
  • 2 cups Yellow Squash Use additional zucchini if unavailable.
  • 2 cups Carrots Substitute with parsnips for a different flavor profile.
  • 1 cup Bell Pepper (Red or Yellow) Any color bell pepper can be used interchangeably.
  • 1 medium Red Onion Yellow or white onions are suitable substitutes.

For the Seasoning and Oil

  • 3 tablespoons Olive Oil Use avocado oil or melted butter as alternatives.
  • 1 teaspoon Garlic Powder Fresh minced garlic can be swapped for a stronger flavor.
  • 1 teaspoon Paprika Use smoked paprika for an extra kick.
  • 1 teaspoon Dried Italian Herbs Fresh herbs can be substituted.
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Black Pepper Use white pepper for a milder flavor.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
  • Slice the sausage into ½-inch coins. Chop the zucchini, yellow squash, carrots, bell pepper, and red onion into uniform sizes.
  • Combine all ingredients in a mixing bowl. Drizzle olive oil over the mixture, then season with garlic powder, paprika, dried Italian herbs, salt, and pepper. Toss together until well-coated.
  • Spread the sausage and veggie mixture on the prepared baking sheet in a single layer, avoiding overcrowding.
  • Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sausage is golden brown and the veggies are tender.
  • Garnish with freshly chopped parsley or basil before serving.

Notes

Store leftovers in an airtight container for up to 4 days. You can also freeze portions in individual containers for up to 2 months.
