  • 1 pound Brussels Sprouts Trimmed and halved
  • 1 pound Carrots Peeled and cut into 1-inch pieces

For the Dressing

  • 3 tablespoons Olive Oil Avocado oil can be a substitute
  • 2 teaspoons Balsamic Vinegar Can substitute with apple cider vinegar
  • 1 teaspoon Garlic Powder Fresh minced garlic works too
  • Salt To taste
  • Pepper To taste

For Garnish

  • Fresh Thyme or Rosemary Optional

Directions

  • Preheat your oven to 425°F (220°C).
  • Combine the halved Brussels sprouts and chopped carrot pieces in a large bowl.
  • Drizzle the veggies with olive oil, balsamic vinegar, garlic powder, salt, and pepper. Toss everything together until evenly coated.
  • Spread the seasoned mixture in a single layer on a baking sheet lined with parchment paper.
  • Roast for 25-30 minutes, stirring halfway through, until tender and caramelized.
  • Garnish with fresh thyme or rosemary if desired.

Notes

A squeeze of lemon juice can brighten the flavors just before serving. For an extra layer of flavor, toss in some crushed red pepper flakes before roasting.
