Ingredients
  

For the Noodles

  • 8 ounces Wide LoMein noodles Substitutes: Spaghetti or udon can be used.

For the Pork

  • 1 pound Ground pork Substitutes: Ground chicken, turkey, or tofu.

For Sautéing

  • 2 tablespoons Peanut oil Substitutes: Vegetable or canola oil.
  • ¼ cup Green onions Use both in the dish and for garnish.

For the Sauce

  • 1 cup Low-sodium chicken broth Ensure low sodium to control saltiness.
  • 2 tablespoons Mirin Substitute: Rice vinegar with a pinch of sugar.
  • 2 tablespoons Dark soy sauce Substitute: Regular soy sauce mixed with molasses.
  • 2 cloves Minced garlic
  • 1 tablespoon Grated ginger
  • 1 tablespoon Sesame oil
  • 1 teaspoon Sriracha Optional for heat.

For the Veggies

  • 4 cups Coleslaw mix (cabbage/carrot mix) Substitute: Shredded fresh cabbage.

  • Boil the wide LoMein noodles according to the package instructions until tender, then drain and rinse under cold water to stop the cooking process and prevent sticking.
  • Heat peanut oil in a large skillet over medium-high heat. Add the ground pork and ¼ cup of green onions, cooking until the pork is browned and cooked through, about 5-6 minutes.
  • In a bowl, whisk together the low-sodium chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha.
  • Add the cooked noodles, coleslaw mix, and sauce to the skillet with the pork. Stir everything together so the noodles are well-coated and everything is heated through, about 2-3 minutes.
  • Using tongs, mix gently until everything is evenly combined and warm. Just before serving, garnish with the remaining green onions.

Notes

Optional: Add a sprinkle of sesame seeds for an extra layer of flavor and crunch.
