  • Parchment Paper
  • Saucepan
  • Mixing bowl
  • Skewers

Ingredients

For the Meatballs

  • 1 pound Ground Beef (or Ground Turkey) Substitution: Swap with chicken or plant-based meat for a lighter option.
  • 1 cup Breadcrumbs Substitution: Use gluten-free breadcrumbs for a GF version.
  • 1/2 cup Parmesan Cheese Substitution: Pecorino Romano or nutritional yeast for a vegetarian-friendly option.
  • 1/4 cup Fresh Parsley Substitution: Dried parsley (2 tablespoons) is great if fresh isn't on hand.
  • 2 cloves Garlic Substitution: Garlic powder works in a pinch, about 1/4 teaspoon.
  • 1 large Egg Substitution: A flax egg (1 tablespoon ground flaxseed + 2.5 tablespoons water) offers a vegan alternative.
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Onion Powder
  • 1 teaspoon Italian Seasoning

For the Cranberry Glaze

  • 1 cup Cranberry Sauce Substitution: Homemade cranberry sauce can give a fresher and richer taste.
  • 1/2 cup Barbecue Sauce Substitution: Use any of your favorite BBQ sauces!
  • 2 tablespoons Apple Cider Vinegar
  • 1 tablespoon Brown Sugar (optional) Adjust to taste.

For Assembly

  • 12 skewers Skewers Choose between wooden or metal skewers depending on your preference.
  • 1/4 cup Fresh Parsley optional, for garnish

Instructions

Directions

  • Preheat your oven to 400°F (200°C), and line a baking sheet with parchment paper to prevent sticking.
  • Mix together ground beef (or turkey), breadcrumbs, Parmesan cheese, fresh parsley, minced garlic, egg, salt, black pepper, onion powder, and Italian seasoning in a large bowl.
  • Shape the mixture into meatballs, about 1 inch in diameter, and place them evenly on the baking sheet.
  • Bake the meatballs in the preheated oven for 15-20 minutes, or until they're cooked through and nicely browned.
  • Prepare the cranberry glaze by combining cranberry sauce, BBQ sauce, apple cider vinegar, and optional brown sugar in a saucepan over medium heat.
  • Cool the meatballs slightly once baked, making them easier to handle for assembly.
  • Thread 2-3 meatballs onto each skewer and either brush them with the warm cranberry glaze or serve it on the side for dipping.
  • Garnish with fresh parsley, if desired, for a burst of color and flavor.

Notes

Drizzle with a touch more glaze before serving for an extra touch of sweetness.
