  • 1 lb Ground Beef or Pork Mix
  • 1 cup Breadcrumbs panko or gluten-free
  • 3 scallions Green Onions chopped
  • 3 cloves Garlic minced
  • 1 tbsp Fresh Ginger minced
  • 1 tbsp Soy Sauce preferably low-sodium
  • 1 tbsp Sesame Oil
  • 1 tbsp Brown Sugar or honey
  • 1 large Egg optional
  • to taste Black Pepper
  • to taste Salt

For the Korean BBQ Sauce

  • 1 cup Soy Sauce preferably low-sodium
  • 1 tbsp Brown Sugar adjust to taste
  • 1 tbsp Gochujang
  • 2 tbsp Rice Vinegar
  • 1 tbsp Sesame Oil
  • 2 cloves Garlic minced
  • 1 tbsp Fresh Ginger minced
  • 1 tbsp Cornstarch mixed with water

How to Make Savory Korean BBQ Meatballs

  • In a large bowl, combine the ground beef, breadcrumbs, green onions, garlic, ginger, soy sauce, sesame oil, brown sugar, egg, black pepper, and salt. Mix gently until just combined; don’t overmix to keep the meatballs tender.
  • Shape the mixture into 1-inch diameter meatballs, approximately 20 in total, ensuring they are uniform for even cooking.
  • Set your oven to 400°F (200°C). This ensures a perfectly cooked interior and crusty exterior.
  • Line a baking sheet with parchment paper, place the meatballs on it, and bake for 15-20 minutes. They should be browned and cooked through, feeling firm to the touch.
  • In a saucepan, combine soy sauce, brown sugar, gochujang, rice vinegar, sesame oil, garlic, and ginger. Heat over medium, stirring frequently until it reaches a simmer.
  • Add the cornstarch mixture to the simmering sauce and cook for 2-3 minutes, stirring until thickened and glossy.
  • Toss the baked meatballs in the sauce until they’re evenly coated, ensuring a delectable glaze on every morsel.
