For the Zucchini

  • 2 medium Zucchini Can be substituted with yellow squash
  • 1 tablespoon Sesame Oil Use high-quality for best taste
  • 2 tablespoons Soy Sauce Use tamari for a gluten-free option
  • 1 tablespoon Teriyaki Sauce Optional, or omit

For the Flavoring

  • 2 cloves Garlic Minced
  • 1 teaspoon Ginger Grated
  • 1 tablespoon Mirin or Rice Vinegar Can substitute with white vinegar
  • 1 tablespoon Brown Sugar or Honey Sugar alternatives like erythritol can be used
  • 1/2 teaspoon Chili Flakes Optional, adjust to taste

For the Garnish

  • 1 tablespoon Toasted Sesame Seeds
  • 2 tablespoons Green Onion Chopped
  • to taste Black Pepper

Directions

  • Start by washing and drying the zucchinis. Remove the ends and slice them into thick half-moons or diagonals, about ½-inch thick to ensure even cooking.
  • In a small bowl, combine soy sauce, teriyaki sauce (if using), minced garlic, grated ginger, mirin, and brown sugar or honey.
  • Preheat a cast iron skillet or griddle over medium-high heat until it’s very hot. Once ready, add a generous drizzle of sesame oil.
  • Arrange the zucchini slices in a single layer in the skillet. Sear them for 2-3 minutes undisturbed until they turn golden brown. Flip and sear the other side for an additional 2 minutes.
  • Pour the glaze mixture over the sizzling zucchini. Gently toss to coat them evenly and allow it to simmer for a minute until the sauce thickens slightly.
  • Remove from heat and transfer the glazed zucchini to a serving bowl. Top with chopped green onions and toasted sesame seeds. Serve hot and enjoy!

Notes

This dish should be enjoyed fresh but can be stored in an airtight container for up to 3 days in the fridge. Reheat gently in a skillet to maintain texture.
