Instructions

  • Prepare Green Beans: Start by washing and trimming the green beans, then cut them into smaller pieces if you'd like a bite-sized dish.
  • Blanch Green Beans: In a large pot of boiling salted water, cook the green beans for about 3-4 minutes until they’re tender-crisp.
  • Ice Bath: Transfer the beans immediately to a bowl of ice water to stop the cooking process and keep them vibrant.
  • Toast Almonds: In a skillet over medium heat, toast the sliced almonds for 3-4 minutes until they’re golden brown and fragrant. Remove from heat and set aside.
  • Sauté Garlic: In the same skillet, melt the butter along with the olive oil, then sauté the minced garlic for about 30 seconds.
  • Combine Beans: Add the blanched green beans back into the skillet and sauté for about 3-4 minutes.
  • Finish Dish: Stir in the lemon zest and juice, seasoning generously with salt and freshly ground pepper to taste.
  • Fold in Almonds: Gently fold in the toasted almonds, making sure they mix well but don’t get smashed.
  • Serve: Transfer everything to a serving dish and garnish with the freshly chopped parsley.

Notes

For best flavor, use fresh garlic and lemon zest. Adjust seasoning to suit your palate for optimal balance.
