Ingredients
  

For the Shrimp

  • 1 lb large shrimp peeled and deveined

For the Zucchini Noodles

  • 2 medium zucchini spiralized

For the Flavor

  • 3 cloves garlic minced
  • 1 tsp red pepper flakes optional, adjust to taste
  • 2 tbsp lemon juice fresh
  • 1 pinch salt to taste
  • 1 pinch pepper to taste

For Cooking

  • 2 tbsp olive oil or avocado oil

For the Garnish

  • 2 tbsp fresh parsley chopped
  • 1/4 cup grated Parmesan cheese optional, or nutritional yeast

Instructions
 

Cooking Steps

  • Prepare zucchini noodles using a spiralizer or vegetable peeler and set aside.
  • In a large skillet, heat olive oil over medium heat until shimmering.
  • Add minced garlic and red pepper flakes, sauté for 30 seconds until fragrant.
  • Add shrimp, season with salt and pepper, and cook for 2-3 minutes on each side until pink.
  • Remove shrimp from skillet and set aside. In the same skillet, add zucchini noodles and sauté for 2-3 minutes.
  • Return shrimp to the skillet, add lemon juice, and cook for another minute, tossing to combine.
  • Serve hot, garnished with parsley and optional Parmesan cheese.

Notes

To preserve texture, avoid microwaving and add olive oil when reheating if necessary.
