Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts You can use thighs for juicier stuffing.
  • to taste salt Adjust according to your preference for seasoning.

For the Filling

  • 1 tablespoon olive oil Can substitute with avocado oil for a different flavor.
  • 2 cups fresh spinach, chopped Frozen spinach can replace it; ensure it's well-drained.
  • 1 cup ricotta cheese Cottage cheese is a lighter alternative.
  • 1/2 cup cream cheese, softened Use Greek yogurt for a lighter version.
  • 1/2 cup grated Parmesan cheese Pecorino cheese can be used for a sharper taste.
  • 1/2 cup shredded mozzarella cheese Cheddar is a good swap if preferred.
  • 2 cloves garlic, minced Garlic powder can substitute if fresh is not available.
  • 1/2 teaspoon dried oregano Adjust quantity if using fresh oregano.
  • 1/2 teaspoon garlic powder Omit if you’re using only fresh garlic.

For Cooking

Directions

  • Sauté the spinach in olive oil over medium heat for about 2–3 minutes until wilted.
  • Mix the sautéed spinach with ricotta, cream cheese, Parmesan, mozzarella, minced garlic, oregano, garlic powder, salt, and pepper in a bowl.
  • Preheat your oven to 375°F (190°C).
  • Prepare the chicken breasts by patting them dry and creating a horizontal pocket in each.
  • Season the outside of the chicken breasts generously with salt and pepper.
  • Stuff each chicken pocket generously with the spinach and cheese filling.
  • Heat olive oil in an oven-safe skillet and sear the stuffed chicken for 3–4 minutes on each side until golden brown.
  • Transfer the skillet to the oven and bake the chicken for 20–25 minutes until the internal temperature reaches 165°F (74°C).
  • Rest the cooked chicken for 5 minutes before slicing.
  • Serve the chicken warm, drizzled with pan juices, and pair it with roasted vegetables or a light salad.

Notes

Avoid overstuffing the chicken to prevent it from bursting. Use a meat thermometer for accurate cooking temperature.
