Ingredients
  

For the Sausage

  • 1 pound Smoked Sausage substitute with turkey or plant-based sausage

For the Rice

  • 1 cup Long-Grain White Rice rinse before cooking

For the Veggies

  • 1 medium Red Bell Pepper can swap with other bell pepper varieties
  • 1 medium Green Bell Pepper can swap with yellow or orange bell peppers
  • 1 medium Onion yellow or white; can use shallots
  • 3 cloves Garlic use fresh for best flavor

For the Broth and Seasoning

  • 2 cups Chicken Broth can use vegetable broth for vegetarian
  • 2 tablespoons Cajun Seasoning store-bought or homemade

For Cooking

  • 1 tablespoon Olive Oil can substitute with canola or avocado oil
  • to taste Salt adjust according to preference
  • to taste Pepper adjust according to preference

For Garnish (Optional)

  • 0.25 cup Fresh Parsley chopped
  • 0.25 cup Green Onions chopped
  • as desired Hot Sauce choose your favorite brand

Instructions
 

Preparation

  • Slice the smoked sausage, dice the red and green bell peppers, and chop the onion. Mince the garlic and rinse the long-grain white rice until the water runs clear.
  • Heat a tablespoon of olive oil in a large skillet over medium heat. Add the sliced sausage and cook for about 5-7 minutes until browned and crispy. Remove the sausage from the skillet and set aside.
  • In the same skillet, toss in the diced onion and bell peppers. Sauté for about 3 minutes until they soften, then add the minced garlic and cook for an additional minute.
  • Stir in the rinsed rice and toast it in the skillet for about 2 minutes.
  • Pour in the chicken broth and sprinkle the Cajun seasoning over the rice. Bring to a boil, reduce heat, and let it simmer, covered, for 15-20 minutes.
  • Stir the browned sausage back into the skillet, mixing well with the rice and vegetables. Cook for an additional 3-5 minutes.
  • Dish out the Cajun Sausage and Rice Skillet while it’s hot. Garnish with fresh parsley, green onions, and a drizzle of hot sauce if desired.

Notes

Store leftovers in an airtight container for up to 3 days. This dish can be frozen for 2-3 months. Label with the date for freshness.
