  • Fresh cilantro, chopped for garnish

How to Make One Pan Chicken Burrito Bowl

  • Prepare Ingredients: Start by dicing the chicken into bite-sized pieces and seasoning it with salt, cumin, chili powder, and garlic powder. Chop the onion and bell pepper, then rinse the black beans.
  • Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and sauté until golden brown and cooked through, about 5-7 minutes.
  • Add Veggies and Rice: Toss in the diced onion and bell pepper, and sauté until tender, about 3-4 minutes. Stir in the rice, black beans, and corn.
  • Simmer: Pour in 1.5 cups of water (or broth), bring to a boil. Reduce heat to low, cover, and simmer until rice is cooked, about 15-20 minutes.
  • Finish and Serve: Fluff rice with a fork, drizzle fresh lime juice, and garnish with cilantro. Add optional toppings if desired.
