Dressing

  • 1 cup mayonnaise can substitute with Greek yogurt for a lighter option
  • 2 tablespoons white wine vinegar can use apple cider vinegar as an alternative
  • 1 clove garlic minced; or use 1/8 tsp garlic powder
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper freshly cracked preferred

Salad

  • 2 cups cooked chicken breast shredded, rotisserie chicken speeds up prep
  • 1 large cucumber firm, for optimal texture
  • 1 cup red bell pepper can use any bell pepper variety
  • 1/2 cup red onion or swap for green onions for a milder flavor

Preparation

  • In a small bowl, blend together the mayonnaise, white wine vinegar, minced garlic, salt, and black pepper until smooth and creamy.
  • In a large mixing bowl, combine the shredded chicken with the dressing.
  • Gently fold in the diced cucumber, red bell pepper, and red onion until all ingredients are evenly coated and well mixed.
  • Cover the bowl tightly with plastic wrap and refrigerate for at least 30 minutes.
  • Once chilled, garnish with fresh herbs like parsley or dill and serve.

Notes

For added flavor, drizzle with lemon juice before serving. Store in an airtight container for 2-3 days in the fridge, but best enjoyed fresh.
