Ingredients
  

For the Ramen

  • 8 oz Ramen Noodles Discard seasoning packets for less sodium.

For the Chicken

  • 1 lb Chicken Thighs Boneless, skinless for a lean dish.

For the Stir-Fry

  • 2 tbsp Vegetable Oil Can replace with canola or peanut oil.
  • 1 medium Red Bell Pepper Adds sweetness and crunch.
  • 1 cup Snap Peas Contributes a fresh, crisp texture.
  • 1 medium Carrot Julienned for even cooking.
  • 3 cloves Garlic Finely minced for even distribution.
  • 1 tbsp Ginger Fresh is preferable for potency.
  • 2 medium Green Onions Separate white and green parts for flavor.

For the Sauce

  • 3 tbsp Soy Sauce Low-sodium versions available.
  • 2 tbsp Oyster Sauce Can substitute with hoisin.
  • 1 tbsp Sesame Oil Use sparingly due to strong taste.
  • 1 tbsp Sugar Optional depending on sweetness preference.
  • 1/4 tsp White Pepper Can substitute with black pepper.

Instructions
 

Preparation

  • Bring a pot of water to a rolling boil for cooking the ramen noodles.
  • In a small bowl, combine soy sauce, oyster sauce, sesame oil, sugar, and white pepper. Stir well.
  • Heat 1 tablespoon of vegetable oil in a large wok. Stir-fry the chicken thighs until golden brown, about 5-6 minutes.
  • Add the remaining oil and stir-fry the red bell pepper, snap peas, and carrot for 2-3 minutes.
  • Stir in minced garlic, grated ginger, and green onion whites. Stir-fry for another 30 seconds.
  • Add the ramen noodles to the boiling water and cook for around 2 minutes. Drain and add to the pan.
  • Return the chicken to the wok and pour the sauce over. Stir-fry together for 2-3 minutes.
  • Garnish with the green parts of green onions and serve hot.

Notes

For an extra touch, serve with chopsticks and pickled vegetables on the side.
