  • 2 cups Cooked Shredded Chicken Use leftover rotisserie chicken for ease.

For the Dressing

  • 0.5 cup Mayo or Greek Yogurt Creaminess is key.
  • 2 tablespoons Fresh Lime Juice Bottled lime juice can work in a pinch.
  • 1 teaspoon Chili Powder Essential for flavor.
  • 1 teaspoon Garlic Powder Essential for flavor.
  • 1 teaspoon Cumin Essential for flavor.
  • 1 teaspoon Paprika Essential for flavor.
  • 1 teaspoon Salt Essential for flavor.

Preparation

  • In a medium bowl, add the mayo (or Greek yogurt), fresh lime juice, chili powder, garlic powder, cumin, paprika, and salt. Whisk until smooth and creamy.
  • In a large mixing bowl, combine the cooked shredded chicken, black beans, corn, chopped jalapeños, quartered cherry tomatoes, diced red onion, and pepitas. Toss gently to mix.
  • Pour your prepared dressing over the chicken and vegetable mix. Stir it all together until everything is evenly coated.
