Ingredients
  

For the Stir-Fry

  • 1 lb Ground Beef substitute with ground turkey or tofu
  • 3 cloves Garlic minced
  • 1/4 cup Soy Sauce consider low-sodium option
  • 1 tsp Chili Flakes adjust to your spice preference
  • 1 tbl Sesame Oil can be swapped with vegetable oil
  • 1 tbl Brown Sugar or honey/maple syrup

For the Vegetables

  • 2 cups Broccoli Florets or swap with snow peas/spinach
  • 1 medium Red Bell Pepper or any bell pepper variety
  • 1 medium Zucchini or replace with carrots/snap peas
  • 1 cup Mushrooms shiitake or button mushrooms are great choices

For Assembly

  • 1 tbl Olive Oil for sautéing vegetables
  • 4 cups Steamed White Rice or brown rice/cauliflower rice

Preparation

  • Start by washing and chopping all your vegetables into bite-sized pieces, and don’t forget to finely mince the garlic.
  • Measure out your sauces for a smooth cooking experience.

Cooking

  • Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat.
  • Sauté the minced garlic for about 30 seconds until fragrant, then add the ground beef.
  • Cook until browned, about 5-7 minutes.
  • Stir in the soy sauce, chili flakes, and brown sugar, allowing everything to simmer for 3-4 minutes until the sauce thickens slightly.
  • In a separate pan, warm 1 tablespoon of olive oil over medium heat.
  • Briefly sauté 1 clove of minced garlic before adding the mushrooms.
  • Cook for about 2 minutes, then toss in the broccoli, zucchini, and red bell pepper.
  • Stir-fry for an additional 4-5 minutes until vegetables are tender-crisp.
  • Serve the steamed rice in bowls, topped generously with the spicy stir-fried beef and colorful veggies.
  • Drizzle any leftover sauce over the top for extra deliciousness.

Notes

Optional: Garnish with chopped scallions or toasted sesame seeds for an added crunch and flavor boost. Use day-old rice for better texture.
