For the Lamb

  • 1 large Lamb Shoulder bone-in preferred
  • 1 tablespoon Salt to taste
  • 1 teaspoon Black Pepper to taste

For the Rub

  • 4 cloves Garlic thinly sliced
  • 2 tablespoons Fresh Rosemary chopped
  • 1 tablespoon Lemon Zest
  • 2 tablespoons Olive Oil

For the Cooking Liquid

  • 1 cup White Wine or Broth

  • Prep the Lamb: Pat the lamb shoulder dry with a paper towel and score the fat in a crosshatch pattern.
  • Make the Rub: In a small bowl, combine the thinly sliced garlic, chopped fresh rosemary, lemon zest, olive oil, salt, and black pepper.
  • Season the Lamb: Generously massage the rub into the scored fat of the lamb shoulder.
  • Create the Cooking Liquid: Place the seasoned lamb in a roasting dish and pour the white wine or broth around it.
  • Roast Slowly: Cover the dish tightly with foil and roast in a preheated oven at 300°F (150°C) for 4 to 4.5 hours.
  • Crisp the Top: Remove the foil and increase the oven temperature to 400°F (200°C). Roast uncovered for an additional 20-30 minutes.
  • Rest Before Serving: Take the lamb out of the oven and tent it with foil. Allow it to rest for at least 20 minutes.
