Instructions

  • Preheat your oven to 400°F (200°C). This ensures an even roast for both the turkey and vegetables.
  • Whisk together olive oil, rosemary, thyme, garlic, lemon juice, salt, and pepper in a large bowl.
  • Marinate the turkey by pouring the mixture over it in a resealable bag or dish. Let it rest for at least 30 minutes, up to 2 hours.
  • Toss halved baby potatoes, sliced carrots, and red onion with olive oil, salt, and pepper in a large bowl.
  • Arrange the marinated turkey in the center of a sheet pan and surround it with the seasoned vegetables.
  • Roast in the oven for 30-35 minutes, ensuring the turkey reaches an internal temperature of 165°F (75°C).
  • Combine dried cranberries, pecans, maple syrup, and a pinch of salt in a small bowl.
  • Sprinkle the cranberry pecan mixture over the turkey and vegetables after they finish roasting.
  • Return the sheet pan to the oven for an additional 5-10 minutes to warm the topping through.
  • Rest briefly after removing the pan from the oven, then garnish with fresh parsley before serving.

Notes

Serve with cranberry sauce for an extra burst of flavor. For optimal flavor, consider marinating the turkey overnight.
