Ingredients
  

For the Chicken Marinade

  • 1 pound boneless, skinless chicken breasts or pre-cooked rotisserie chicken
  • 1/4 cup soy sauce or gluten-free soy sauce
  • 2 tablespoons honey or maple syrup for vegan option
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 1 tablespoon sesame oil optional to omit
  • 1 tablespoon fresh ginger or ground ginger, reduced quantity
  • 2 cloves garlic fresh or powdered
  • 1 teaspoon red pepper flakes optional heat

For the Pineapple Salsa

  • 2 cups fresh pineapple or canned if fresh isn't available
  • 1 medium red bell pepper green bell pepper is an alternative
  • 1/2 medium red onion or sweet onion for milder taste
  • 1/4 cup cilantro or parsley for non-cilantro lovers
  • 1 medium jalapeño use more or less for heat
  • 2 tablespoons lime juice fresh lime preferred
  • 1/2 teaspoon salt to taste

For Assembling the Tacos

  • 8 pieces corn or flour tortillas gluten-free if required
  • 1 tablespoon olive oil or cooking oil of your choice
  • 1 cup shredded cabbage or slaw mix substitute with lettuce if desired
  • optional toppings sliced avocado, sriracha mayo, or lime wedges

Preparation

  • Marinate the Chicken: In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, fresh ginger, minced garlic, and red pepper flakes. Add cubed chicken, cover, and let it marinate in the refrigerator for 30 minutes to 4 hours for maximum flavor.
  • Prepare the Pineapple Salsa: Mix diced fresh pineapple, red bell pepper, red onion, chopped cilantro, jalapeño, lime juice, and salt in a bowl. Taste and adjust seasoning if necessary, then refrigerate until ready to use.
  • Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Add the marinated chicken and cook for 5-7 minutes, stirring occasionally, until browned and its internal temperature reaches 165°F (74°C).
  • Warm the Tortillas: To warm the corn or flour tortillas, use a dry skillet over medium heat, a microwave for a few seconds, or an open flame briefly until pliable and warm.
  • Assemble the Tacos: Start with a layer of shredded cabbage in each tortilla, then top with the cooked chicken and a generous spoonful of pineapple salsa. Finish off with any optional toppings you desire, then serve immediately.

Notes

Marinate the chicken for at least 2 hours for maximum flavor. Use fresh ingredients when possible for the best taste.
