Ingredients
  

For the Meatloaf

  • 1 cup Panko Breadcrumbs Regular breadcrumbs can work in a pinch.
  • 2 large Eggs Essential for binding the ingredients.

  • 1 teaspoon Garlic Powder Roasted garlic adds deeper flavor.
  • 1 teaspoon Onion Powder Enhances sweetness.
  • 1 teaspoon Dried Basil Feel free to substitute with fresh.
  • 1 teaspoon Dried Parsley Fresh herbs can be used as well.
  • 1 teaspoon Salt Adjust according to taste.
  • 1/2 teaspoon Black Pepper Adjust according to taste.
  • 1/2 cup Whole Milk Can substitute with plant-based milk.

For the Glaze

  • 1 tablespoon Unsalted Butter Serves as the base for the glaze.
  • 1/4 cup Additional Parmesan For sprinkling on top.
  • 2 tablespoons Fresh Parsley For garnish.

Steps

  • Preheat your oven to 190°C (375°F).
  • Prepare a baking sheet with parchment paper or grease a loaf pan.
  • Mix in a large bowl: combine ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, pepper, and whole milk. Gently stir until just combined.
  • Shape the mixture into a loaf and place it on your prepared baking sheet or in the loaf pan.
  • Bake the meatloaf for 40-45 minutes, or until its internal temperature reaches at least 74°C (165°F).
  • Prepare the glaze by melting unsalted butter in a saucepan, sauté minced garlic until fragrant, then stir in extra Parmesan and parsley.
  • Brush the glaze over the meatloaf and return to the oven for an additional 5-7 minutes.
  • Rest for about 5 minutes before slicing.

Notes

Serve with sides like mashed potatoes or a fresh salad for a complete meal.
