  • 1 tsp Garlic Powder Enhances the garlicky flavor.
  • 1 tsp Onion Powder Adds savory depth.
  • 1 tsp Dried Basil Or use fresh for a vibrant taste.
  • 1 tsp Dried Parsley Or use fresh if preferred.
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1/2 cup Whole Milk Plant milk for a dairy-free option.
  • 2 tbsp Unsalted Butter Margarine can be used instead.

For the Glaze

  • 2 cloves Garlic Sautéed in butter for aroma.
  • 1/4 cup Additional Parmesan Enhances richness.
  • 1 tbsp More Parsley For garnish.

Preparation

  • Preheat Oven: Set your oven to 190°C (375°F) and prepare a baking sheet or grease a loaf pan.
  • Mix Ingredients: In a large bowl, combine the ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, parsley, salt, pepper, and milk. Mix gently until just combined.
  • Shape Loaf: Form the mixture into a loaf shape and place it on the prepared baking sheet or in the greased loaf pan.
  • Bake: Bake for 40-45 minutes, or until the internal temperature reaches 74°C (165°F). The juices should run clear.
  • Prepare Glaze: In a small saucepan, melt the unsalted butter, sauté the minced garlic until fragrant, then mix in additional Parmesan and parsley until the glaze thickens.
  • Apply Glaze: Brush the glaze over the meatloaf and return it to the oven for an additional 5-7 minutes.
  • Rest and Serve: Let the meatloaf rest for about 5 minutes before slicing and serving.

Notes

For a delightful twist, serve with a side of tangy balsamic vinegar drizzle.
