Ingredients
  

For the Chicken

  • 4 pieces Chicken Breasts boneless

For the Roasted Carrots

  • 2 cups Baby Carrots or regular carrots cut to size

For the Marinade

  • 3 tablespoons Olive Oil or avocado oil
  • 4 cloves Garlic fresh, minced
  • 1 teaspoon Thyme dried or fresh
  • 1 teaspoon Rosemary dried or fresh
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste

Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • In a medium bowl, combine olive oil, minced garlic, thyme, rosemary, salt, and pepper. Mix well.
  • Coat the chicken breasts in the marinade, ensuring they are well-covered.
  • Spread baby carrots on a baking sheet and drizzle with the remaining marinade. Toss to coat.
  • Place marinated chicken on the baking sheet with the carrots and bake for 30 minutes or until the chicken reaches 165°F (75°C).
  • Let the dish cool slightly before serving hot, optionally garnished with fresh parsley.

Notes

Marinate the chicken overnight for best flavor. Serve with quinoa or a salad for a complete meal.
