  • 8 ounces provolone cheese or mozzarella or cheese sauce

For the Rolls

  • 4 hoagie rolls or Italian sandwich rolls, zucchini or lettuce wraps for low-carb

For the Seasoning

  • 2 cloves garlic fresh garlic adds great depth
  • 2 tablespoons Worcestershire sauce soy sauce can be a substitute
  • 1 tablespoon Italian seasoning omit for a classic taste

For Cooking

  • 2 tablespoons butter can replace with olive oil
  • 1 tablespoon cooking oil use neutral oil like canola or vegetable

  • In a mixing bowl, combine thinly sliced boneless chicken breasts with Worcestershire sauce, olive oil, salt, and pepper. Let this marinate for about 15 minutes to enhance the flavor.
  • Heat a blend of butter and cooking oil in a skillet over medium heat. Add sliced yellow onions and bell peppers, sprinkling with a pinch of salt. Cook for 6-8 minutes until tender and caramelized, then stir in fresh garlic and Italian seasoning for 30 seconds before removing from the skillet.
  • Increase the heat to high and add the marinated chicken to the same skillet, spreading it evenly across the pan. Sear undisturbed for 1-2 minutes, then stir, cooking for an additional 3-4 minutes until the chicken is cooked through and lightly browned. Season to taste.
  • Reduce the heat, and return the sautéed vegetables back to the skillet, mixing them with the chicken. Form mounds in the skillet and top each mound with slices of provolone cheese, covering the skillet to melt the cheese for about 30-60 seconds.
  • Spread garlic mayo or butter on hoagie rolls, then scoop the cheesy chicken and vegetable mixture into the rolls. Serve immediately while hot, and enjoy the delicious gooeyness!

Notes

Consider adding sliced jalapeños for an extra kick of flavor. Store leftovers in an airtight container for up to 3 days. Freeze the filling for up to 2 months.
