  • 2 pounds Yukon Gold or Red Potatoes Feel free to substitute with your favorite type.
  • 1/4 cup Olive Oil Avocado oil is a great alternative.
  • 4 cloves Garlic Minced.
  • 1/4 cup Lemon Juice From about 2 lemons.
  • 1 tablespoon Lemon Zest From 1 lemon.
  • 2 teaspoons Dried Oregano Substitute fresh oregano if available.
  • to taste Salt Essential to enhance flavor.
  • to taste Pepper Essential to enhance flavor.
  • for garnish Fresh Parsley Cilantro offers a savory twist as an alternative.

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • Combine in a large bowl the potato wedges, olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper. Mix well.
  • Toss the potatoes gently until they are evenly coated.
  • Transfer the coated potatoes to a parchment-lined or greased baking sheet.
  • Roast the potatoes for 45-50 minutes, turning halfway through.
  • Remove from the oven and allow the potatoes to cool slightly.
  • Garnish with fresh chopped parsley just before serving.

Notes

Optional: Drizzle with extra olive oil for a richer flavor.
