  • 1 cup Cottage Cheese Use vegan yogurt for a dairy-free option.

For the Drizzle

  • 1/4 cup Hot Honey Can swap with regular honey for milder flavor.

  • Preheat Oven: Set your oven to 400°F (200°C) for perfect roasting.
  • Prepare Sweet Potatoes: Peel and dice the sweet potatoes, toss with olive oil and seasonings, spread on a baking sheet, and roast for 40-45 minutes, stirring halfway.
  • Cook Onion: Heat olive oil in a skillet over medium heat. Add diced onion and sauté until soft, about 3-4 minutes.
  • Brown Beef: Add ground beef to the skillet, breaking it up as it cooks. Sprinkle in taco seasoning, salt, and pepper, and cook until browned, around 6-8 minutes.
