Base

  • 1 cup Kimchi Aged kimchi delivers the boldest flavor.
  • 1 cup Fresh Pineapple Canned pineapple can be used in a pinch.
  • 4 cups Plain Cooked Rice Day-old and cold rice is ideal.

Seasoning

  • 1 tablespoon Gochujang Adjust amount according to heat preference.
  • 1 teaspoon Black Pepper
  • 1 teaspoon Sugar

Garnish

  • 2 tablespoons Scallions Freshly sliced (optional).
  • 1 tablespoon Sesame Oil Drizzle over the finished rice.

Cooking Steps

  • Warm a skillet over medium heat and pour in a generous amount of cooking oil.
  • Add the kimchi to the skillet alongside gochujang, black pepper, and sugar. Stir-fry for about 3-4 minutes.
  • Toss in the fresh pineapple chunks and sauté for another 2-3 minutes.
  • Gently add the cold, cooked rice to the skillet and stir-fry for 5-6 minutes.
  • Remove from heat, drizzle with sesame oil, and sprinkle with scallions if using.

Notes

Use cold, day-old rice for the best texture. Fresh rice can lead to a mushy result. Adjust the gochujang according to your spice preference.
