Ingredients
  

For the Chicken Marinade

  • 2 pieces Chicken Breasts Boneless, skinless
  • 1/4 cup Honey
  • 1/4 cup Lime Juice Freshly squeezed
  • 1 teaspoon Lime Zest Optional
  • 2 cloves Garlic Minced
  • 1 teaspoon Ground Cumin Adjust to taste
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste

For the Rice Base

  • 1 cup Jasmine Rice Rinsed
  • 2 cups Chicken Broth Or water

For the Avocado Mix

  • 2 pieces Avocados Diced
  • 1/4 cup Red Onion Diced
  • 1/4 cup Fresh Cilantro Chopped
  • 1 tablespoon Olive Oil

For Serving

  • 4 pieces Lime Wedges For garnish

Preparation

  • In a medium bowl, whisk together honey, lime juice, lime zest, minced garlic, cumin, salt, and pepper until well combined.
  • Place the chicken breasts in a resealable bag or a dish, pour the marinade over, and seal or cover. Allow the chicken to marinate for at least 30 minutes, or up to 2 hours.
  • Rinse the jasmine rice under cold water until the water runs clear. In a pot, bring chicken broth to a boil, add the rinsed rice, reduce heat to low, cover, and simmer for approximately 15 minutes.
  • Preheat your grill to medium-high heat. Remove the chicken from the marinade and grill for about 6–7 minutes per side or until fully cooked.
  • In a bowl, combine diced avocados, red onion, cilantro, and olive oil. Gently toss to mix.
  • On serving plates, layer the cooked rice first, followed by the grilled chicken. Top generously with the avocado mix.
  • Garnish with lime wedges and serve.

Notes

Let the chicken marinate for at least 2 hours to enhance flavors. Freshness is key when preparing the avocado mix to avoid browning.
