How to Make Pineapple Upside Down Sugar Cookies

  • Preheat the oven to 350°F (180°C) and line your baking trays with parchment paper.
  • Cream softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  • Beat in the large egg and optional vanilla extract until well combined.
  • Whisk together all-purpose flour (or gluten-free blend), baking soda, and salt in a separate bowl.
  • Gradually combine the dry mixture with the wet ingredients to form a soft dough.
  • Scoop 2 tablespoons of dough for each cookie onto the prepared trays, ensuring space in between.
  • Press a pineapple ring gently into the center of each cookie dough mound. Sprinkle with sugar.
  • Bake for 11-13 minutes until the edges are golden brown and the centers are set.
