Ingredients

For the Ribs

  • 2 pounds Baby Back Ribs Ensure they are defrosted properly if frozen before use.
  • 1 teaspoon Salt Adjust according to taste preference.
  • 1 teaspoon Black Pepper Seasoning to enhance flavor.
  • 2 tablespoons Olive Oil Can substitute with vegetable oil.

For the Pomegranate Glaze

  • 1 cup Pomegranate Juice Can use store-bought or freshly squeezed.
  • 1/2 cup Brown Sugar Granulated sugar can be used for a less rich flavor.
  • 1/4 cup Soy Sauce Low-sodium soy sauce can be used.
  • 2 tablespoons Apple Cider Vinegar Can substitute with white wine vinegar.
  • 1 tablespoon Dijon Mustard Yellow mustard can be used in a pinch.
  • 3 cloves Garlic (minced) Fresh is best, can use garlic powder if necessary.
  • 1 tablespoon Fresh Ginger (grated) Ground ginger is an alternative.
  • 1/2 teaspoon Cayenne Pepper Optional, omit for a milder flavor.

For Garnish

  • 1/4 cup Pomegranate Seeds Can substitute with chopped nuts.
  • 2 tablespoons Fresh Parsley or Cilantro (chopped) Use your preferred herb for topping.

Instructions

Preparation

  • Preheat your oven to 300°F (150°C). Gently remove the membrane from the back of the ribs for maximum tenderness, then season both sides generously with salt and pepper.
  • In a medium saucepan over medium heat, mix together pomegranate juice, brown sugar, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, grated ginger, black pepper, and optional cayenne. Bring to a gentle simmer and cook for 10–15 minutes until the mixture thickens, then remove from the heat.
  • Set a wire rack on a lined baking sheet. Place the ribs on the rack, brush with olive oil, cover with foil, and bake for 2 hours.
  • After 2 hours, carefully remove the foil and brush the ribs generously with the prepared glaze. Increase the oven temperature to 400°F (200°C) and broil for 10–15 minutes, glazing every 5 minutes until the glaze is sticky and caramelized.
  • Allow the ribs to rest for a few minutes after broiling. Garnish with beautiful pomegranate seeds and a sprinkle of fresh herbs, then serve.

Notes

Consider serving with a side of creamy mashed potatoes. Adjust salt and sweetness to taste during the cooking process for a personalized touch.
