Ingredients
  

For the Noodles

  • 200 g Somyeon Thin Korean wheat noodles

For the Sauce

  • 3 tbsp Gochujang Korean chili paste
  • 1 tbsp Gochugaru Korean red chili flakes, optional
  • 2 tbsp Soy Sauce Tamari for a gluten-free version
  • 1 tbsp Sugar Can substitute with honey or maple syrup
  • 1 tbsp Rice Vinegar Alternately, use apple cider vinegar
  • 1 tbsp Sesame Oil Olive oil can be used but alters flavor
  • 2 cloves Garlic Minced

For the Veggies

  • 1 medium Cucumber Julienned
  • 2 stalks Scallions Thinly sliced
  • 1 cup Kimchi or Pickled Radish Optional

For the Protein

  • 2 large Eggs Soft or hard-boiled
  • 1 tbsp Sesame Seeds Crushed peanuts can substitute

How to Make Spicy Bibimmyeon

  • Boil Noodles: Start by cooking the somyeon noodles according to the package instructions, usually about 3–4 minutes. Stir them occasionally to keep them from sticking together.
  • Rinse Noodles: Once the noodles are cooked, immediately rinse them under cold running water to cool and wash away excess starch. Make sure to drain them well.
  • Make Sauce: In a mixing bowl, combine gochujang, gochugaru, soy sauce, sesame oil, sugar, rice vinegar, and minced garlic. Stir until smooth.
  • Combine Noodles and Sauce: Add the cooled noodles to the bowl with your sauce. Gently toss until coated.
  • Prepare Toppings: While the noodles sit, julienne your cucumber and scallions, and boil the eggs.
  • Plate: Transfer the noodles into a serving bowl. Arrange your fresh veggies and kimchi around the edges, and add the halved egg on top sprinkled with sesame seeds.
  • Serve: Enjoy your spicy bibimmyeon immediately while it's cold, mixing in your toppings just before eating.

Notes

Always rinse the somyeon noodles under cold water immediately after cooking for a chewy texture. Customize spice levels by adjusting gochujang and gochugaru to taste.
