  • 2 cups masarepa This precooked corn flour is essential for creating the perfect texture; avoid regular cornmeal.
  • 2 medium sweet potatoes Roast until caramelized for the best result.
  • 1 can black beans Adds protein and heartiness; canned beans are a quick and convenient option.
  • 1 cup water Needed to bind the ingredients; adjust based on desired consistency.
  • 1 teaspoon salt Enhances flavor; a pinch goes a long way.

For the Toppings

  • 1 medium avocado Creamy and nutritious; cut fresh for a bright flavor.
  • 2 tablespoons lime juice Adds a zesty kick.
  • ¼ cup cilantro Provides a refreshing finish; substitute with parsley if preferred.

Procedure

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Roast the sweet potatoes by slicing them in half, cut-side down, on the baking sheet for about 35-45 minutes.
  • Prepare the black beans by draining and rinsing. Heat in a skillet with spices for about 5-7 minutes.
  • Mix the arepas dough with masarepa, roasted sweet potatoes, salt, and enough water to form a soft consistency. Let it rest for 5 minutes.
  • Shape the dough into small patties, about ½ inch thick. Yield about 6-8 arepas.
  • Cook the arepas on a hot skillet over medium heat for 4-5 minutes on each side.
  • Serve the arepas warm, topped with black beans, avocado, lime, and cilantro.

Notes
