For the Beef

  • 2 pounds Beef Chuck Roast Substitutes: brisket or flank steak.

For the Sauce

  • 1/2 cup Soy Sauce Low sodium recommended.
  • 1/4 cup Brown Sugar Substitutes: honey or maple syrup.
  • 2 tablespoons Gochujang (Korean Chili Paste) Substitute: Sriracha.
  • 2 tablespoons Sesame Oil Substitute: olive oil.
  • 4 cloves Garlic (Minced) Fresh garlic is preferred.
  • 1 tablespoon Fresh Ginger (Grated) Substitute: ground ginger.
  • 2 tablespoons Rice Vinegar Substitute: white vinegar.
  • 1/4 teaspoon Black Pepper Optional.

For the Noodles & Vegetables

  • 2 cups Beef Broth (or Water) Substitute: vegetable broth.
  • 8 ounces Egg Noodles (or Rice Noodles) Substitutes: whole grain or gluten-free noodles.
  • 2 cups Carrots (Sliced or Julienned) Substitutes: peppers.
  • 1 cup Bell Peppers (Sliced) Substitutes: zucchini.
  • 2 cups Broccoli Florets Substitute: green beans.

For Garnish

  • 1/4 cup Green Onions Substitutes: chives.
  • 2 tablespoons Sesame Seeds Substitutes: chopped nuts.

Preparation Steps

  • In a large bowl, combine soy sauce, brown sugar, gochujang, sesame oil, minced garlic, grated ginger, rice vinegar, and black pepper. Whisk until smooth, creating a fragrant marinade.
  • Place the beef chuck roast chunks into your slow cooker. Pour the delicious marinade over the beef, making sure each piece is well coated. Add beef broth or water to ensure everything stays moist.
  • Cover the slow cooker and set to low for 6-8 hours, or high for 3-4 hours. Your beef is ready when it is tender and easily shreddable—ideal for soaking up that marvelous flavor!
  • About 30 minutes before you're ready to serve, prepare the egg noodles according to package instructions. Drain and set aside.
  • In the last 30 minutes of cooking, stir in the sliced carrots, bell peppers, and broccoli florets.
  • Once the beef is tender, use two forks to shred it right in the slow cooker. Gently stir the shredded beef to combine it with the sauce and vegetables.
  • Add your cooked noodles into the slow cooker. Gently toss everything together until the noodles are evenly coated with that delicious spicy-sweet sauce.
  • Serve your dish hot and garnish with freshly chopped green onions and a sprinkle of sesame seeds.

Notes

For the best results, store noodles separately if not all consumed at once to prevent them from becoming too soft.
