Cooking Steps

  • Start by preheating your oven to 400°F (200°C).
  • Gently pat the rack of lamb dry with paper towels. Rub a little olive oil over the surface and season generously with salt and pepper.
  • In a skillet over medium-high heat, sear the lamb for about 2-3 minutes on each side until beautifully browned.
  • In a mixing bowl, combine minced garlic, Dijon mustard, fresh herbs, breadcrumbs, Parmesan, salt, and pepper.
  • Brush the cooled lamb with olive oil, then press the herb mixture onto the meat.
  • Transfer the lamb to the preheated oven and roast for 25-30 minutes.
  • Once out of the oven, let the lamb rest for about 10 minutes.
  • Slice the lamb into chops and arrange them on a platter. Drizzle with balsamic vinegar and garnish with fresh herbs.

Notes
